I tried brewing witbiers with malted wheat, and they were okay. But as soon as I added unmalted wheat, everything fell into place! That signature light haze, that smoothness. This is it!
Don't Forget the Rice Hulls!
Great product, gives the beer a perfect body. A little tip: don't forget to add rice hulls to the mash! This wheat is very sticky and can completely clog your filter bed. With hulls, no problem at all.
Great result, tricky to work with
The result exceeded expectations, the witbier turned out silky and delicious. But it's definitely trickier to work with than malt. You need a good mill and patience during sparging. But for an authentic taste, it's worth it.
